Perfect Pumpkin Protein Pancakes

It is Autumn and time to bring out the pumpkin goodies. here is a great way to start the day!

Perfect Pumpkin Protein Pancakes
  • 3 eggs
  • 1/3 cup pumpkin puree
  • 3/4 cup almond flour
  • 1 scoop vanilla protein powder
  • 1 drop ginger essential oil
  • 2 drops cinnamon bark essential oil
  • 1 tsp baking powder
  • pinch of salt
  • Preheat gridle to 350 f
  • Mix together wet ingredients
  • Add in dry ingredients, mixing until smooth
  • Grease griddle
  • Using a 1/2 cup measuring cup, scoop batter onto griddle
  • Cook for 1 -2 minutes per side
