  • Chicken & Vegetable Noodle Soup

    This soup is soothing when the days are getting chillier. It is also great to have in the freezer just in case someone in your household falls prey to a cold or flu. No need to be slaving all day in the kitchen this soup is prepped in about 15 minutes. Filled with vitamin and mineral-rich veggies, broth, chicken, and immune-boosting spices, it can do wonders for a cold. It’s also easy to digest, allowing your body to dedicate more energy to healing than to digestion. As you sit and sip, the vapors from the soup will help clear out your nasal passages and the warmth will soothe your throat. These herbs and spices that are known to boost immunity include: garlic, oregano, turmeric, sage, basil, ginger, cayenne, rosemary, and many others. And using them in their essential oil form give a bigger boost in health properties and flavor!

    CHICKEN & VEGETABLE NOODLE SOUP

    Makes about 16 cups             8 -2 cup size servings

    15 min prep     25 cooking time

    Ingredients:

    • 10 cups water
    • 4 cups Low Sodium Chicken Broth
    • 1 T Olive Oil
    • 8 oz cut up Chicken breast (or use precooked chicken & skip the saute step)
    • 1 T minced garlic
    • 1 chopped large onion
    • 2 cups sliced Celery
    • 2 cups sliced carrot
    • 8 oz dry pasta
    • 3 cups fresh spinach
    • ½ T dry Italian Herb Mix
    • 1 T chopped fresh parsley
    • ½ tsp fresh ground pepper
    • 2 drops each of Lemon & Oregano essential oils (don’t have oils see How to substitute for dried HERE) or Purchase Essential Oils HERE

     Directions:

    • Bring water & broth to boil.
    • Sauté chicken in Olive Oil, then add garlic, onion, celery & carrots.
    • Add to water & broth bring to bake to boil then simmer about 15 minutes (carrots are starting to get soft)
    • Add pasta and return to boil for about 6 minutes (paste a dente)
    • Add spinach, Herb mix, essential oils & and simmer about 5 minutes

    Nutrition per 2 cup serving:   205 calories, Fat-3.3, Cholesterol- 13.75, Sodium- 355, Carbohydrates-31.6, Fiber-3.4, Sugar-5.6, Protein- 12

  • DIY – Liquid Laundry Detergent with Essential Oils

    Recently I got a stubborn grease stain on one of my favorite shirts. My DIY stain remover helped but it didn’t take it all out. So I went online to try some other remedies. Each one I tried only made things worse! I pretty much resigned that this stain was here to stay but then thought well I’ll wash it one more time but first I’ll put a glob of my DIY Liquid Laundry Detergent on it and let it sit for a day. After washing it, I couldn’t believe my eyes – No trace of the stain! From now on I will only need to make the laundry detergent and use it as a stain remover also.

    You may wonder why I even bother to make my own detergent. Well, have you ever even looked at the ingredient list (and they don’t even have to list everything!)? We need some chemicals to clean our clothes. By making my own detergent, I can eliminate a majority of the synthetic chemicals so cutting down the amount toxins. By adding certain essential oils, I am able to naturally have a detergent that offers increased protection from bacteria, fungus, viruses, and also is mood uplifting. I have also discovered that it takes very little time to make the detergent. And the bonus is that it is way cheaper than commercial detergents!

    Liquid Laundry Detergent

    Ingredients:

    • 2 gallons HOT water
    • 4 cups grated soap flakes, about 1 bar of Fels-Naptha (find in laundry isle)
    • 1 cup washing soda (Arm & Hammer in laundry isle)
    • 1 cup borax (20 Mule Team in laundry isle)
    • Essential Oils – 30 drops lemon, 30 drops wild orange, 20 drops melaleuca (Buy Here)
    • a  funnel

    Directions:1.microwaved felsnaptha

    • To make grating easier place Fels-Naptha bar in microwave in high for about a minute. It will look like this, a puffy rectangle.
    • Grating will be much easier! Trust me on this. While it was a good workout for my arms, it was a long and laborious process. Here’s what it looks like grated after microwaving:

    • Dissolve the soap in hot water, this requires stirring
    • Add washing soda and borax, and mix well.
    • Add essential oils, mixing them in well
    • Use a funnel to pour into mixture into containers. I leave room at the top because I usually will add more water to make it more liquid.

     

    • As this mixture cools it will get gelatinous and will need to be shaken. If the consistency of the soap is not to your liking you can adjust the soap and water ratio. Here’s proof :

    5. solidified laundry soap

    • To use add 1⁄2 -1 cup to load of laundry. I use this ratio even if I have added as much half again water. It still cleans very well even though there are next to no suds.

    NOTES:

    • Safe for high efficiency washers (low suds)
    • You can use different essential oils, just remember it may change some of the benefits of the detergent. I use the following oils because they have high ratings in these benefits.

  • Flourless Brownies

    It may surprise you to know these fourless brownies are made with Black beans. They are a delicious and nutritional, full of fiber and protein compared to traditional chocolate brownies. Don’t be nervous about baking with black beans, they have a mild flavor and are extremely rich and creamy. You can also boost the flavor and health benefits of your brownie with essential oils such as Peppermint, Wild Orange, Cinnamon, Cassia or even Lavender.

    BLACK BEAN BROWNIES

    Ingredients:

    • 1 (15 oz) can black beans, drained & rinsed
    • 2 large eggs
    • 1/4 cup cocoa powder (I used Special Dark)
    • 1/2 cup raw honey
    • 1/3 cup organic virgin coconut oil melted (Buy HERE)
    • ½ teaspoon baking powder
    • Pinch of salt
    • 4 drops Cassia essential oil (or Wild Orange, Cinnamon, Peppermint, Lavender)   (purchase essential oils that can be ingested HERE)
    • 2/3 cup chocolate chips, divided (I used Special Dark, could also use carob chips)

    Directions:

    1. Preheat oven to 350 degrees.
    2. Place all ingredients, except for chocolate chips, in a blender or food processor and blend until smooth.
    3. Pour batter into large bowl and stir in ½ cup chocolate chips.
    4. Pour into greased 8×8-inch pan and top with ¼ cup chocolate chips.
    5. Bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean.
    6. Let cool and cut into 24 pieces. Store in refrigerator.

    1 piece = Calories-98.7, Fat-8.7g, Chol.-15.5g, Sod-10mg, Carbs-13g, Fiber-2g, Sugar-8.5g, Protein-2.4g

    NOTES:

    • These brownies freezes well. Great way to have a little something after dinner!

  • Surplus Veggie Quick Bread

    The Summer harvesting is upon us! You may have a vegetable garden that’s giving you an abundance of crops or you are enjoying the bounty at your local Farmer’s Market. If you find yourself with a little bit of this and a little bit of that, here is a different way to use them up besides making soup!

    This bread isn’t a sweet bread like most squash quick breads. This morning I had it toasted with a butter substitute I make with Coconut Oil and it was tasty! I found it goes well with a meal or with a spreadable cheese for a snack.

    Remember to be adventuresome and switch out the suggested veggies for the ones you have.

     

    Surplus Veggie Quick Bread       Yield: 1 loaf of 18 slices

    Ingredients:

    • 1 cup Organic Rye Flour
    • 1 cup Organic Whole-wheat Flour
    • ½ cup uncooked Organic oats
    • 3 T. grated Parmesan Cheese
    • 1/4 cup Raw Local Honey
    • ½ tsp. salt
    • 1 tsp. baking powder
    • 1/2 tsp. baking soda
    • 3 eggs
    • 1/2 cup milk
    • 1/2 cup organic virgin coconut oil liquefied
    • 1 cup grated carrot
    • 1 cup grated zucchini
    • 1/3 cup chopped green onions with tops
    • 1/2 cup finely chopped celery with leaves
    • 1 T. each of chopped fresh Thyme, Basil & Oregano
    • 1 drop each of Thyme, Basil & Oregano Essential Oils purchase HERE

    Directions:

    • Preheat oven to 350 degrees F.
    • Oil & flour standard loaf pan.
    • In large bowl, combine dry ingredients.
    • In separate bowl, beat together eggs, milk and oil.
    • Combine wet inBread_Surplus Veggiesgredients, dry ingredients, and herbs, essential oils and veggies until just moistened.
    • Fill loaf pan and let sit for 10 minutes or so before baking.
    • Bake for 1 hour, or until toothpick inserted comes out clean.
    • Cool briefly, then turn out of pan to cool further.

    1 loaf yields 18 slices Nutrition Per slice: 143 cal, 7.5g total fat, 32mg Chol, 85mg sodium, 16.5g carbs, 2.3g fiber, 5g sugar, 3.5g protein

    NOTES:

    • This bread freezes nicely and travels well so great for sharing which means you just may want to make several loafs at a time.
    • Besides changing out the vegetables you could also change the Herbs and essential oils. If you don’t have the particular essential oil up the fresh herb to 2-3 Tablespoons.
    • I use the oils because it ups the health/nutritional benefits for the bread.

  • Keep Ants & Spiders Away with a DIY Natural Repellent Spray

    While cleaning the other day, it appeared to me that there was an influx of spiders and their webs. Everywhere I turned there seemed to be another one! Now I’m the first to admit that I just do ‘surface’ cleaning most of the time. But give me a break it hadn’t even been a month since I last did a thorough job! I’m not particularly fond of spiders since I react rather intensely from their bites. If they are outside I will pretty much leave them alone, but inside they are fair game. And I’m not talking about a catch and release program.

    After cleaning I decided it was time to do a bit of PREVENTION and as you know, I prefer natural methods whenever possible. I have found a DIY Natural Repellent Spray for ants and spiders made with Peppermint essential oil. It is super easy, way less expensive and non-toxic to people and our furry friends.

    What you Need:

    • 12 drop Peppermint essential oil  (Purchase here)
    • 1/2 teaspoon liquid castile soap  (Get Castile Soap HERE) Regular liquid dish soap doesn’t have the same properties so it won’t cling to surfaces. Plus they are full of toxins, Yuk!
    • 8 ounces of water
    • Glass Spray bottle (Get glass bottle here)  Pure essential oils will break down plastic bottles so it is best to use glass. If you do use a plastic spray bottle then store leftover mixture in a glass container in a cupboard to the light and heat doesn’t get to it.   glass trigger spray bottle

    Directions: 

    • In a glass container, combine water and castile soap
    • Add essential oil stirring or shake to blend
    • REMEMBER to shake bottle frequently when spraying to keep oil mixed with water.
    • Store left overs in an airtight glass container if you use a plastic sprayer

     To Use:

    • Spray along line of ants
    • Spray areas where spiders hide and where spin webs appear

  • Celebrating with Berry Lemonade

    Today is Labor Day, officially a day to celebrate the social and economic achievements of American workers. Symbolically, it is the end of summer! It is a day off for many workers giving them time to celebrate that end.  But it just seems to me there are still many warm days left before fall really kicks in. I want to continue enjoying them with summer foods for as long as they last! One way I do that is with a simple to make and healthier version of Lemonade. Cheers!

    BERRY LEMONADE

    Recipe makes 48 ounces (6 – 8 ounce servings)

    • Blend 4 cups berries until pureed (my favorite is strawberries)
    • Fill glass jar with 32 oz. cold water
    • Add puree
    • Add juice of ONE fresh Lemon
    • Add 8 drops Lemon essential oil or to taste
    • Add 20 drops liquid stevea or to taste
    • Mix well serve chilled

    Per serving = Calories-32, Fat-0g, Chol.-0g, Sod-0mg, Carbs- 7.4g, Fiber-1g, Sugar-5g, Protein-0g

  • Cheese Yogurt Enchiladas

    Yesterday I was savoring each bite of my Cheese Yogurt Enchiladas when it occurred to me that I should share this recipe with others. I first started making the original version, Cheese Sour Cream Enchiladas about 40 years ago. About 3 years ago it dawned on me to substitute plain fat free Greek yogurt. My daughter was living with us at that time so she knew very well  what the originals tasted like. She agreed with me that this newer healthier version was just just as tasty as the original. They even held up in the after freezing taste test!

    We usually have one enchilada with red or black beans, brown rice and a fresh veggie mixed green salad. I was so eager to dig in and forgot to take a photo of my plate. Here is the casserole dishes with leftover enchiladas ready to be frozen for a future meals.

    Cheese Yogurt Enciladas

    Cheese & Yogurt Enchiladas

    Serves 6

     Ingredients:

    • 2 c Fat Free Plain Greek Yogurt
    • 1 c chopped green onions (with tops)
    • ½ t ground cumin
    • 2 ½ – 3 c shredded cheddar cheese
    • 6 flour tortillas
    • 10 oz Enchilada Sauce

    Directions:

    • Blend yogurt, onion, cumin & 1 cup of cheese
    • Warm enchilada sauce in flat pan/dish
    • Warm 3 tortillas at a time until just bendable (about 20 sec in microwave)
    • Put some sauce to just cover bottom of 9 X 13 pan
    • Dip both sides of tortilla into sauce
    • Fill Tortilla with 1/6 of yogurt cheese mixture & fold/roll up
    • Repeat until all 6 tortillas are filled and in pan
    • Pour remaining sauce over enchiladas (optional)
    • Sprinkle remaining 2 cups of cheese evenly over enchiladas
    • Bake at 375 degrees for about 20 minutes

    May garnish with more yogurt & green onions (optional)

    You can make the enchiladas ahead and chill in refrigerator until ready to bake.

    After baking you can freeze the remainder and then warm up for another meal!

    1 serving = 380 calories, 21 grams fat, 181 mg Potassium, 61 mg Cholesterol,

    780 mg Sodium, 22 g Carbohydrates, 1.76 g Fiber, 3.2 g Sugar, 21.25 g Protein, 541.4mg Calcium

     

    Making dishes that work for more than one meal is a favorite way of cooking for me. There is just so much to do in this lifetime that I need a few healthy short cuts!
